Japan is known for its three famous knife production areas, Sakai in Osaka, Seki in Gifu, and Tsubame-Sanjo in Niigata. Of these, Sakai is famous for its  s ingle-bevel Japanese knives, producing professional Japanese knives that account for approximately 90% share in Japan.  (Western knives are mostly double-bevel.) Motsunabe is a hot pot dish that mainly consists of  beef or pork tripe (Motsu) simmered with vegetables. I’ve had matcha shaved ice at many places, but I like this one the best, made by a long-established tea shop “Tsuboichi”.   Whenever I go to Japan, I always check out the Japan-exclusive Haagen-Dazs. In the summer of 2025, the Hojicha (roasted green tea) Kinako (roasted soybeans flour) gelato was on sale exclusively in Japan. They apparently order the wagashi from several Japanese sweet shops in Kyoto. 京都本店では喫茶が併設されており、お茶はもちろん和菓子も絶品です。和菓子は数軒の京都のお菓子屋さんから取り寄せているそうです。
